Malpua Recipe – Malpura Recipe


Malpua or Malpura Recipe is the traditional North Indian States and Pakistani cites Kharchi and Lahore sweet of sugar syrup coated Pancakes. Malpua is a sweetened Pancake, they are quite different from regular Pancakes. Malpua is made with Wheat flour, coated with sugar syrup, and topped with nuts. Malpua recipe is mostly made during festivals and special occasions. Soft and fluffy on the inside, yet crisp and lacy on the outside, these syrup-dipped Malpua/Malpura are a real treat, especially when you serve them with thickened sweetened milk, which calls Rubbery.



⦿ Rubbery
⦿ Half kg of milk
⦿ 2 tbsp of sugar
⦿ 1 pinch of green cardamom powder


**Sugar Syrup**

⦿ Half cup of sugar
⦿ 1 pinch yellow food color
⦿ Half cup of water


**For Batter**

⦿ Half cup of maida flour
⦿ Half cup of rubbery
⦿ 1/4 cup of milk
⦿ 1 pinch of green cardamom powder
⦿ Pistachios 2 tbsp
⦿ Oil As required for fry




⦾ To make it rubbery, add half kg of milk to the pan and bring to boil.
⦾ Add in sugar, green cardamom powder, and stir till the milk is thickened. Keep it aside.
⦾ Let’s start making sugar syrup, add sugar and water to a pot.
⦾ Stir well until sugar has dissolved.
⦾ Add in yellow food color and boil the sugar syrup until it turns sticky.
⦾ To make the batter, in a medium bowl add rubbery & maida flour and mix everything well.
⦾ Once the sugar syrup is ready, heat the oil in a pan.
⦾ Pour the batter into the oil. Fry them till both sides are golden brown.
⦾ Remove them from the pan and add to the sugar syrup.
⦾ Transfer to a plate and garnish with rubbery and pistachios.
⦾ Malpua is ready, Serve it hot. Enjoy!
